This is not an amazing breakfast, but it’s meant to be an example of a quick and healthy breakfast. I hear a lot of people saying that they do not have the time to make breakfast in the morning so the only thing they are able to do is pick up a coffee and a breakfast roll/wrap/pastry etcetera. However, this can take 10 minutes maximum to prepare and it is healthy for you and will keep you full for most of the morning.

Ingredients: 

  • 4x eggs
  • Pinch of Salt

Blue Berry and Banana Smoothie ingredients – 

  • 2 bananas, smashed
  • 3/4 cup full-fat coconut milk
  • 85 grams blueberries, fresh or frozen
  • 85 grams raspberries, fresh or frozen
  • 1 tsp vanilla extract
  • 2 cups ice

Method:

Boiled eggs: Put a pot of cold water onto the stove top. Turn the stove plate to its highest heat. Add a pinch of salt to the water and once the water is boiling rapidly, then take the pot off of the stove plate. Put your timer on for 4 minutes. After the 4 minutes is up then fill the pot up with cold water and peel the shells off your eggs.

In the meantime, add the smoothie ingredients to a food processor and blits them up until smooth, about 2 minutes.
