What is better than pancakes with maple syrup on top? Yum yum! I make these as a Saturday morning treat for Andrew and I, or if the week is feeling particularly long I will make them before work :)
1/2 cup almond butter
1 tsp Olive oil/Ghee
Optional: chocolate chips/blue berries
Heat your pan on the stove top to a medium heat.
Put all of the ingredients into a food processor, excluding the syrup and optional extras. Blits the ingredients up until smooth. If you are adding chocolate chips/blueberries then add them to the mixture now.
Let the ingredients rest for about 10 minutes and/or until the pan is nice and warm. Put in 1 tsp of olive oil in the pan.
Pour in the batter – your pan should be able to make about 3-4 pancakes at a time. Let them cook for 2-3 minutes on each side until golden brown.
My favourite way to serve these is as a pancake stack and to drizzle maple syrup/honey on top.
