Granola is one of my go to breakfasts. I make a big batch which lasts about two weeks for two people eating about 3x weekly.

Granola Mix:

  • 800g 3x Nuts of choice (eg. almonds, cashew, pecans)
  • 200g of mixed seeds (eg. sunflower, pumpkin)
  • Dessicated coconut
  • Raisins
  • Optional: Choc chips
  • Salt


  • Honey
  • Coconut oil
  • Vanilla Essence


Put the oven onto 180 degrees celcius.

If you have a food processor, then blitz up the nuts and seeds, ensuring you stop before they become sawdust. If you don’t have a food processor then chop up the nuts and seeds until desired texture is reached.

Pour the chopped nuts and seeds into a medium sized bowl. Add in the dessicated coconut.

On a stove top, pour in about 1/2 cup of honey and about 1 cup of coconut oil. Add two tsp of vanilla essence. Heat and mix until all has melted together.

Pour the sauce onto the granola mix and ensure that it coats all of the granola nicely.

Take a thin baking sheet and put a sheet of baking paper onto it. Pour your raw granola mix onto the baking sheet and ensure that it covers the whole surface area. Please ensure that it is a single layer of granola mix, do not over fill it. If you need a second tray then rather repeat the process.

Cook your granola for 25-30 minutes until golden brown, stirring after 12 minutes.

Once cooked, remove from the oven and sprinkle your raisings and salt. Leave for 20 minutes so the granola can form clumps. Once cooled, if desired sprinkle some chocolate chips on top and pour the granola mix into a nice big cereal tuppaware. Enjoy your quick and easy breakfast.

This granola goes very nicely accompanied by some chopped up apple/strawberry/berries and yogurt of choice.
