I am someone who needs to eat smaller portions, but more regularly throughout the day. These date balls have been a lifesaver. They are absolutely delicious and so healthy too! This batch made about 28 date balls. This recipe is from Deliciously Ella.

200g almonds (1 cup)
400g medjool dates (2 cups)
4 tablespoons raw cacao powder
2 ½ tablespoons almond butter
2 tablespoons coconut oil

Begin by placing the almonds in the food processor and pulsing until they are nicely crushed.

Add the medjool dates and coconut oil and pulse until it’s fully mixed

Add the almond butter and cacao and then mix again in the food processor.

Take a tablespoon of the mixture and roll into a ball. Continue doing this until the mixture has finished.

Place the rolled balls into the freezer for around 1 hour, then remove and store in an airtight container in the fridge.

*Nutribullet version:

I only have a nutri bullet to process the ingredients with now that we living in Ireland and so we gave it a bash even though Ella makes a strong encouragement to only use a food processor. What I did though was I pulsed the almonds up (one handful at a time) very roughly. The nutri bullet is very strong so I literally pulsed for 1-2 times, and repeated until all the amends were pulsed up. I put them into a bowl.

I then took the dates (we used normal dates), cacao powder, almond butter and coconut oil and divided the mixture into two and blended it up, repeating twice. I added in a small amount of water to help it along, about 100 mls. It made a beautiful paste.

I then  scraped the paste into the almond mixture and stirred it all together by hand.

Then rolled them together and popped them onto two plates into the freezer. They are DELICIOUS!
