Place the Porridge Oats, Rice Flour, Cocoa Powder, Almond Flour, Baking Powder, and Salt into a mixing bowl and mix well until there are no lumps.
Add in the Maple Syrup, Almond Milk, and melted Coconut Oil and mix until well combined.
Add in the Chocolate Chips and mix through.
Scoop out balls of the mixture using a tablespoon or an ice-cream scoop, and roll them into ball shapes using your hands. Place the balls onto a lined baking tray and push down on them a little to form a cookie shape.
Bake for 10-15 minutes until golden. Once cooked, remove from the oven and leave to cool.
